Vegan in Fuerteventura: Corralejo, the North Coast

The restaurants that we like best are mentioned first.

The family Cantatore (baobab), the chef of Past & Future and the Romanian waitress of H20 were so incredibly nice that I felt at home there.

When we became vegan I bought many cookbooks. Often meat was just be replaced by soy or seitan. So we decided to develop and share recipes that use none of those ingredients.

Our friends and family couldn't imagine vegan cuisine without meat substitutes. One even insisted on saying: "So from now on you can only eat tofu!" ...I mean, come on guy.

I mainly develop recipes without gluten, soy and white sugar. I like creative challenges.

Sorry for not calling this blog "vegan without soy" but I couldn't resist the pun. "No soy vegan" means "I'm not vegan" in spanish. I guess you already knew that ...but just in case.

Since last year I'm not only a middle school teacher who has already worked in many other professions. Now I'm also a holistic nutritionist.
My husband is a software developer. But in his leisure time he likes to inform himself about health (and about many other topics).
